You can keep playing, in fact your save file knows you've beaten Ganon; there's some symbol I believe now in the save that indicates you've done it. It's just that there are no changes to the world after you've beat the game. ;Even though it's technically not possible to continue past the game's ending, players can still go back to tie up any loose ends after beating the final boss.
